Oxidative aging wine, obtained by the partial fermentation of grape must of the Pedro Ximénez variety previously pasified, with about 2-3 years of aging through the traditional system of soleras and criaderas in oak vats. It is very sweet; the alcohol graduation is 15% vol. and comes in bottles of 75 cl.
Tasting notes
Dark mahogany color, dense and unctuous, it has powerful notes of fresh raisins and other notes of passification. In the mouth intense, sweet and tasty, with an excellent acid-sweet balance that makes it fresh and harmonious and gives it a great volume and persistence.

A modern-looking Pedro Ximénez invites you to be creative in pairing and not limit it exclusively to desserts appetizers, cheeses, foie or stuffed meats will harmonize perfectly with this wine.
