Pioneer initiative in the Marco de Jerez, cause we are facing the first ecological chamomile in history. It represents the commitment of the winery with the care of the environment, which we respect, value and what we are so proud of. Most of it comes from an ecological Palomino vineyard, located in the quoted estate of Burujena.

Biological aging wine under a flower veil. Coming from organic musts of the 100% palomino variety, this chamomile is about 2 years old by means of the traditional system of soleras and criaderas, and ages in oak vats recovered from the hearth of La Goya. His alcoholic graduation is 15% vol. and comes in transparent bottles and with a cork stopper of 75 cl.

Tasting note

Golden yellow, bright and vivid. The smell shows floral notes and those of biological aging, having a fruity that brings freshness, with a more citrus profile, but with nuances of ripe fruit. In the mouth it becomes drier, less glyceric, and its passage becomes longer and more persistent, being able to clearly identify the before mentioned aromatic notes.

Pairing

In addition to the traditional pairing with seafood recipes, this chamomile harmonizes perfectly with fresh dishes such as ceviche, tartar, fruit salads or vegetarian dishes.
